Description
A true confidential gem of Champagne, La Bolorée is a legendary cuvée signed by Cédric Bouchard, an emblematic figure of artisanal champagnes from the Côte des Bar. Coming from a tiny plot of barely 0.2 hectares, this wine is produced exclusively from old Pinot Blanc vines over 50 years old, planted on an exceptional limestone terroir.
Produced in about 1,000 bottles per vintage, this single-plot cuvée is vinified with absolute precision: hand-harvested, long aging, zero dosage, and a philosophy close to biodynamics.
La Bolorée 2015 reveals a light golden hue with bubbles of exemplary finesse. On the nose, the bouquet is subtle and precise with citrus (lime), ripe yellow fruits, white flowers, almond, and a hint of gingerbread.
On the palate, the texture is creamy and enveloping, balanced by a fine acidity. Notes of white fruits, chalk, and a vibrant minerality. The finish is long, fresh, and slightly bitter, the signature of great terroir wines.
