Description
The Dolia 2015 vintage is an exceptional wine that shakes up the conventions of Southern white wines. Made from a blend of Clairette, Marsanne, and Roussanne, it is farmed using biodynamic methods on the clay-limestone soils of Saint-Rémy-de-Provence. Its distinctiveness lies in its vinification and aging process: Dominique Hauvette ferments and ages this wine for many months in concrete eggs (doliums), with no oak influence whatsoever. The 2015 vintage, generous and sun-drenched, allowed for exceptional phenolic ripeness while preserving the balance characteristic of the estate.
Visually, the wine displays an intense gold color with crystalline highlights. The nose is complex, opening with notes of very ripe yellow-fleshed fruit (peach, apricot), honey, fennel, and candied citrus. With aeration, a touch of fresh almond and a chalky mineral sensation further enrich this deeply profound bouquet.
On the palate, Dolia 2015 is striking for its texture and volume. The attack is broad and fleshy, but it is immediately structured by a vibrant mineral tension that lends it great precision. The absence of oak allows for a pure expression of fruit and terroir, offering a silky sensation inherited from aging in concrete eggs. The finish is masterful and persistent, marked by salinity and lovely bitter notes.
