Description
Soixante-Douze, the Crémant d'Alsace from Domaine Léon Boesch, is made from a complex blend of Pinot Auxerrois, Riesling, Pinot Gris, Pinot Noir, and Pinot Blanc grown biodynamically.
Hand-harvested, short pressing and traditional fermentation in foudres using indigenous yeasts, followed by one year of aging on total lees, also in foudres. This is followed by bottle refermentation and a final year of aging on laths.
And what a beautiful final result, with notes of fresh hazelnut, toasted almond, and nougat, offering a complex and expressive nose.
The attack is creamy, with a fine vein of acidity gradually emerging mid-palate and carrying the wine with hints of Morello cherry and grapefruit.
The aperitif par excellence, it is sublime with savory kouglof and all kinds of refined canapés. It also pairs wonderfully with sauerkraut, bringing a touch of lightness to this indulgent dish!
