Sant'Ulderico 2007 - Monte Dall'Ora

The Sant'Ulderico is a Recioto della Valpolicella Classico, resulting from a drastic selection of the finest bunches from old vines (Corvina, Corvinone, Rondinella) cultivated using biodynamic methods. After a prolonged drying of the grapes (passerillage) for over 4 months, fermentation is stopped naturally to preserve noble residual sugar. This 2007 vintage benefited from a very long aging process in small oak barrels, giving it an exceptional patina.

Visually, the wine displays a dark, almost black ruby color with deep garnet highlights. The nose is an explosion of candied black fruits (amarena cherry, prune), dark chocolate, dried violet, and balsamic notes (incense, medicinal herbs).

On the palate, the wine distinguishes itself by its masterful balance. The attack is smooth and fleshy, but the sugar is immediately balanced by a vibrant acidity and a saline mineral frame. The tannins are silky, providing a structure that avoids any sensation of heaviness. The finish is endless, with notes of bitter cocoa and sweet spices.
