Description
The Les Clapas Blanc 2019 cuvée is a blend of Carignan blanc (predominant) and Terret bourret, complemented by a touch of Grenache blanc. The vines are situated on the limestone scree of the causse, at the foot of the Larzac, at an altitude of 350 meters. This high-altitude terroir, combined with organic and biodynamic viticulture, gives the wine exceptional freshness, which is rare for the Languedoc. The 2019 vintage, although sunny, benefited from the thermal inertia of the limestone cliffs to preserve a masterful balance.
Visually, the wine displays a pale gold color, clear with green highlights. The nose is marked by great aromatic precision, blending notes of white-fleshed fruit (pear, vineyard peach), garrigue flowers, and a hint of fennel. The aging, carried out in oak foudres and concrete eggs, is perfectly neutral: it does not impart oak flavors to the wine but provides volume and a silky texture while respecting its original purity.
On the palate, the sense of verticality is striking. The attack is lively and saline, carried by the sharp minerality of the limestone. The mid-palate reveals beautiful substance, balanced by a natural acidity that stretches the wine into a long, savory finish. We find notes of fresh almond and a noble bitterness that provides depth and calls for gastronomy.
