Description

Le Clau 2025 is one of the most original and exclusive cuvées from Romain Le Bars. Based in Tavel after several years working alongside Éric Pfifferling at Domaine de l’Anglore, the winemaker pursues an artisanal approach rooted in organic farming, soil cultivation, and low-intervention winemaking. With Le Clau, he highlights a grape variety rarely vinified on its own in the Rhône Valley: Ugni Blanc.

Sourced from vines over 40 years old planted on sandy and pebbly soils, this Vin de France reveals the full potential of this grape variety, often relegated to distillation wines. The grapes are harvested at perfect maturity and then pressed directly before a natural fermentation and full aging in demi-muids for 7 months. A tiny dose of sulfur is added at bottling, the only oenological intervention in the process.

The nose is particularly expressive, blending white flowers, fresh pear, citrus, ripe yellow fruits, and delicate notes of almond. Upon aeration, nuances of fresh pineapple, warm stone, and light touches of anise emerge, providing beautiful aromatic complexity.

The palate seduces with its remarkable balance between fullness and tension. The aging brings depth and a silky texture without ever masking the wine's natural energy. Flavors of white fruits, citrus, and exotic fruits extend into a long, saline, and luminous finish that characterizes the finest whites of the south.

At once delightful and gastronomic, Le Clau is the perfect accompaniment to grilled fish, shellfish, crustaceans, Mediterranean vegetables, cream-based poultry dishes, or even aged goat cheeses.
