Description
Located in Cosprons, on the heights of Banyuls-sur-Mer, the Vinaigrerie La Guinelle has been producing artisanal vinegars from carefully selected wines since 1999. The house upholds a unique expertise, now carried on by Chandra Brune, who took over the vinegar works in 2022 after working alongside its founder for ten years.
Banyuls Vinegar is made from the famous Banyuls sweet natural wine. La Guinelle uses a traditional method based on double fermentation—alcoholic followed by acetic. The vinegar is then naturally aged in open-air oak barrels, exposed to the sun and Mediterranean weather conditions, which gives it depth and complexity.
Its red-orange hue signals a particularly aromatic vinegar. The nose evokes ripe red fruits and hazelnut, while the palate combines a frank acidity with a lovely roundness and fruity expression. Sweeter and more complex than a classic wine vinegar, it adds significant depth to dishes without overpowering them.
In the kitchen, it is particularly interesting in vinaigrettes, on salads and vegetables, but also for marinades, fish such as anchovies, or for deglazing. It can also bring an original touch to certain more indulgent preparations, thanks to its fruity and slightly sweet profile.
