The Chermette family's crème de cassis is produced from Blackcurrant “Noir de Bourgogne” which produces small, very concentrated berries with a particularly strong taste.
The blackcurrants are crushed and then macerated with neutral beet alcohol. This maceration lasts approximately two months. After maceration, the blackcurrant juice is drawn off and mixed with dry sugar. The resulting crème de cassis is then adjusted to the correct strength simply by adding neutral alcohol or water.
Nose : very strong and persistent blackcurrant aromas
Mouth : The cream is very concentrated, so you can serve it in small quantities. Served on its own, it retains its smooth texture.
Crème de cassis can be enjoyed with white wine, crémant, or champagne as an aperitif, or neat as a digestif. In cooking, it can be used to deglaze duck breast jus, for example, or on desserts made with red berries or vanilla ice cream.
