The 2019 Chablis Vieilles Vignes from Domaine Bessin-Tremblay is the pure and structured expression of Chardonnay grown on the Kimmeridgian soils of the Chablis region. It represents the estate's flagship wine, made from selections of old vines between 40 and 70 years old, planted on the slopes and plateaus around La Chapelle-Vaupelteigne.
Hand-harvested Chardonnay vines several decades old, planted on clay-limestone soils rich in marine fossils, giving the acidity, liveliness and salinity characteristic of Chablis.
In the winery, gentle pneumatic pressing of whole bunches , fermentations ( alcoholic and malolactic) conducted with temperature control, then aging on lees in stainless steel tanks and barrels for about 15 months.
The result is a Chablis Vieilles Vignes with Fresh and elegant aromas of white fruits (apple, pear), citrus zest and floral notes, supported by a chalky minerality.
On the palate, the attack is lively and taut, with a fine structure, vibrant acidity, and beautiful concentration with a balance between fruitiness and salinity. Finish Long, chiseled and precise, faithful to the classic style of great Chablis wines.
