Description
The Caiño Tinto cuvée from Zarate is a masterpiece of Atlantic viticulture. Produced in very limited quantities in the Salnés Valley (Rías Baixas), this wine highlights Caiño, an almost forgotten native red grape variety known for its late ripening and sharp acidity. Under the guidance of Eulogio Pomares, this wine has become an icon for those seeking "cool climate" reds.
Environmentally friendly viticulture, without herbicides or pesticides, with meticulous manual labor. Fermentation in open wooden vats using indigenous yeasts, followed by 12 months of aging in used French oak barrels.
The result is a wine with an intense nose of small tart red fruits, dried flowers, aromatic herbs, and a saline touch.
The palate is driven by an acidity that provides extraordinary freshness and tension. The tannins are fine, and the finish is long and mineral.
The 2017 vintage now displays a magnificent patina while retaining great youthfulness.
