Vigneti di Ettore's Amarone is a great introduction to discovering this wine with its very particular production method.
Composed of the typical grape varieties of the appellation, namely Corvina, Corvinone, Rondinella and a few others, the grapes are meticulously harvested and then left to dry for 100 days; this process is called the appassimento, thus concentrating them in sugar.
Fermentation then lasts three weeks, and the wine is aged for 30 months in oak barrels. A long process to obtain an exceptional dry red wine, produced from grapes with high sugar content.
It develops intense aromas of cherry, dried flowers, spices, and tobacco. The palate is structured yet elegant, with tannins that are present but soften over time.
It is imperative to taste an Amarone della Valpolicella one day to understand all the work that goes into it.
